In 1977, my parents met in ESL class soon after immigrating to America.  Though I normally fuse the flavors of their countries’ desserts to my American palette (like orange blossom water and azuki beans,) this year I feel the need pay tribute to the red, white and blue with a simple, sweet treat: Berry Fool.  Fresh berries, berry sauce and thick cream are all you need.  Sometimes I get naughty and fold in some mascarpone to the whipped cream for extra body.  No need to get fancy, so use the absolute best ingredients you can find.

Berry Fool

1/2 cup fresh blueberries

Strawberry Sauce

1 cup sliced strawberries

2T sugar

juice of half a lemon

thin strip lemon peel


3 cups cold cream

2 tsp vanilla

1/4 cup powdered sugar (optional)

For the Strawberry Sauce:

Mix ingredients together and let sit for 30 minutes to macerate, the sugar will draw out more liquid from the strawberries.  Cook on medium-low heat until thick and bubbly, 6-8 minutes.  Cool.  Strain through a sieve if desired to remove seeds.

For the Cream:

Whip ingredients until soft peaks form.

Layer sauce, cream and blueberries in a chic jar or glass to catch the patriotic effect.

Idea for activity:

Put sauce and cream in separate ziplock bags or parchment cones.  Make designs that you can freeze for 10 minutes, chill to set up, or just eat as is!
